My lunch for today plus a small apple…oh and some dark chocolate from TJ’s. I know frozen dinners are not the healthiest but they are convenient!
Lunch and a Weigh-In and a little more :-)
It’s been awhile since a weigh-in post let alone any kind of post. I’ve been thinking a lot lately and I really want to get fit, lose weight, and eat better and I keep making poor choices. I tend to overindulge and have this nagging feeling of unfairness when it comes to what I want to eat and what I should eat and what everyone else gets to eat…or should I say chooses to eat. Anyway I went to the market last night on a mission to recreate an awesome sandwich I had at the Corner Bakery in Carlsbad on the way back up from the Rock N Roll Half Marathon in San Diego. So here is the description as it appears on the menu.
Tomato Mozzarella on Ciabatta Ficelle - A vegetarian delight. Plum tomatoes, fresh mozzarella, sweet roasted red peppers, and fresh basil drizzled with balsamic vinaigrette.
So I gathered up all the ingredients I thought I remembered but just now realized that I forgot the roasted red peppers. Nonetheless, I think it came out pretty darn good. I couldn’t find Ciabatta Ficelle, so I substituted a sourdough baguette. Next I looked for the dressing. I knew that most balsamic vinaigrettes in the regular dressing aisle would have some not so good ingredients. So while in the produce section I came upon a selection of fresh or at least fresher salad dressings with hopefully a little bit better ingredients. So I settled on Marie’s Balsamic Vinaigrette. It only has 50 calories per 2 Tablespoons and seemed to have the same color and consistency of the original sandwich dressing and with the exception of some soybean oil and some brown sugar looked okay. Then I looked for some basil, arugula or spinach and just couldn’t justify spending 6 dollars so I settled for some red leaf lettuce sections that I thought might do the trick. Next were the tomatoes. I looked for plum or roma but they all seemed too ripe, so I settled for a regular ole’ tomato. Then on to the mozzarella…Precious brand with a dollar off coupon and it was already on sale so I liked that!! I prepped all the ingredients last night and bagged it up this morning for the trip to work. I remember our work has a toaster oven so I decided the baguette toasted would be perfect. I assembled it open-faced as opposed to regular style. It makes me think I am eating more but I’m not. It was pretty darn good. I can’t be sure on the exact calories as I didn’t really measure anything. But I think it could not have been more than 320 calories and it was all pretty fresh ingredients with the exception of the bread. I could have skipped the bread but I like bread. I also forgot a few Pita chips, but even with those the calories should only top out at about 425 for lunch. I’ll have to measure the ingredients and then do an update.
Now on to the weigh-in:
Today’s weigh-in 145.5 not sure on previous one posted but as high as 147.
Goal weight: 125 so 20 to go. I’ll just take it a day at a time and not rule out any food (a tiny bit at least) as that drives me nuts.
One more thing I exercised this morning and it was great to run with my hubby. I tell you it was a lot better than last night’s run when it was at least 80 degrees. It was a little difficult to get up this morning but since my hubby seemed ready to go. I said okay let’s do this. The only bad part is I think I aggravated a sore muscle in the back of my left upper thigh as I pushed myself a little hard. Hubby! It might be time for the roller. I want to go for a run in the morning again but I think I need the rest days before our Galloway long group run of 9-10 miles on Saturday. I will have to see. Happy Hump Day!! Oh and look to my hubby’s blog for our dinner tonight. It promises to be good from what I hear.
I’ve been wanting to eat better and now I finally decided to get some chicken, veggies and some brown rice together. Thanks to hubby for cooking up the BBQ chicken on the grill last night. I am set for the week.
